White Peony (Pai Mu Tan)
A rare white tea from the Fujian province. Only the first plump white buds that emerge at the beginning of spring are plucked, along with two leaves. This is the least-processed of all the teas, being only sun-dried then lightly baked, creating a light, delicate flavour and aroma of white flowers and undergrowth with a fresh finish.

Brewing: Pour water at 70-80 degrees (1/4 cold to ¾ boiling) over one heaped teaspoon of leaf per cup, infuse for 3-4 min.
Silver Needles (Yinzhen)

Silver Needles - following its namesake, our Yinzhen is slender and shiny. Again, the abundance of white tips denotes a high grade.
Only the top buds are picked in the spring time to produce this highly prized white tea. Yinzhen or “Silver Needles” is so named for its slender leaf, covered with light white fur. The taste is delicate with a slight sweetness, suited to the refined palates of tea connoisseurs.
